1 cup oats
1/2 cup ground flaxseed
1/2 cup mini dark chocolate chips
1 cup flaked coconut
1/3 cup honey
1 teaspoon vanilla
1/2 cup peanut butter

Combine the honey, vanilla and peanut butter until smooth. Combine the dry ingredients. Pour the honey mixture over and mix until well combined. Using a cookie scoop form into balls and freeze or refrigerate.  Store in an airtight container. We just leave ours in the refrigerator or freezer, wherever there is more space.

Mel’s Kitchen Cafe is a great recipe website. I haven’t made anything from her that I haven’t like, so far. This dip is always a favorite. I usually leave out the avocados because they get mushy so quickly. This recipe is great and I am always asked for the recipe. Here’s the link to Mel’s Kitchen Cafe.

  • 1 can white beans, I use Great Northern or Cannellini beans
  • 1 can black beans
  • 1 cup frozen corn
  • 1-2 avocados, diced (I usually leave these out unless I am serving it immediately)
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1-2 Roma tomatoes, diced and seeded
  • 2 tablespoons  chopped red onion
  • 2-3 tablespoons finely chopped cilantro
  • 1/3 to 1/2 cup Kraft Zesty Italian salad dressing
  • Squeeze of fresh lime
  • Salt and pepper to taste
  • Tortilla chips for serving
  1. Drain and rinse the beans in a colander.  Add them to a large bowl.
  2. Add the corn, avocados, red pepper, green pepper, tomatoes, red onion and cilantro. Pour in the dressing and gently fold the ingredients together until evenly coated.
  3. Squeeze the lime juice over the top. Gently mix. Add salt and pepper to taste. Serve with chips.

Yogurt Dip for Fruit

Ingredients:
2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean, optional

Directions
Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside.

Spoon the yogurt over fresh fruit.

I have made fruit parfaits with this dip, fresh fruit and granola. Not only does it taste good, but it looks pretty layered in clear/glass bowls or cups.

9 cups corn chex
1 cup chocolate chips
½ cup creamy peanut butter
½ stick (2 ounces) butter
1 tablespoon vanilla
1 ½ cups powdered sugar

Melt chocolate chips, peanut butter, and butter in microwave for 1 ½ minutes. Stir in 1 tablespoon vanilla and pour over chex, stir gently until coated. Shake in large plastic bag with powdered sugar. Spread on cookie sheet lined with parchment paper

1 large box Rice Chex
1 large box Golden Grahams
2 cups whole almonds
2 cups coconut
2 cups light Karo syrup
1 ½ cups margarine
2 cups white sugar

Combine sugar, Karo syrup, and margarine in a sauce-pan. Bring to a boil and boil for 2 minutes. Pour over other ingredients and stir until completely covered. Cool on cookie sheets until semi-dry and store in an airtight container.
